Freezer Breakfast Burritos

I found a recipe on Pinterest for Breakfast Burritos that you make a ton of and freeze.  Such a great idea.  We are horrible breakfast eaters… so this is one great way to be able to grab a quick breakfast and go.  I tweaked the original recipe, my recipe is below.

I took 19 eggs (how many I had on hand), 2 pounds of sausage, 1 package of turkey bacon, 2 packages of fajita size tortillas, and 1 package of cheese.  After cooking the sausage, bacon, and eggs, we laid out the tortillas and piled the ingredients on.  We separated the different kinds: 1/3 sausage, egg, and cheese; 1/3 bacon, egg, and cheese; 1/3 Hagen’s: both kinds minus the cheese. 

When ready to eat, from the freezer – unwrap the foil – wrap in a paper towel and microwave for 2 minutes.

I couldn’t believe how many it ended up making!!

Things I would change:

I wish I had wrapped in wax paper first, then foil.  This really doesn’t make a difference – but the next time I do this, I will probably add this step.

I wish I had mixed my cheese, egg and sausage together.  Again, not a big deal, but I think it would taste better mixed together.

Jeremy wants ‘real’ bacon instead of turkey bacon.  I do agree ‘real’ bacon is always better.

Since Jeremy is saying what he wants, I would love to add some sautéed onions and bell peppers to a few.

Another thing I would like – to add some hash browns or diced potatoes to them…

A Brick Wall

Our neighbor, Lindsey, came to play in our backyard the other day.  They were all playing chase and Hagen ran into one of our brick columns.  Poor kid!  I know it hurt!!!  Of course, we also had school pictures AND soccer team/individual pictures this week.

It looks kind of like a black eye, but it is actually a scratch.  It extends from his forehead down to his cheek.

Sight Words Game

I found this idea on Pinterest a while ago.  I actually bought the poster board and had it in our office just waiting.  Today I came home to see in the boys’ folders from school a ring with sight words.  Wow, perfect timing!!!
Sight words: words that are very common and children should know them by sight (hence the name ‘sight’ words) instead of having to sound them out every time they see them.  This builds fluency and overall comprehension.

I took the poster board and made a parking lot for their hot wheels.  In each parking spot, I wrote a sight word.

Just for fun, I added ‘Hagen’, ‘Mason’, ‘Momma’ and ‘Daddy.  This was great because I used these first since I knew they would get them immediately.

They LOVED it!!  This is such a great idea!  Wish I could say I thought of it myself, but I didn’t.   That’s okay, I loved copying it.

Some time apart…

I teach only one class on Fridays, but that puts me out of pocket for about 4 hours (it’s a 3 hour class).  So, the other day Gran told me she wanted to spend some one on one time with each of the boys every now and then.  Friday was a great day, Jeremy was off, so each of the boys would get their own special day.

While I was at work, I kept getting text message pictures of what H and M were doing.  (So fun and makes work go much faster.)

Hagen and Gran went to the Omni and saw a show about baby elephants and orangutans.  Here he is at the Omni.

Jeremy and Mason went to see some of his buddies working out of the ‘big bucket trucks’.  Mason LOVES this!  My picture from them was this:

Mason got to pick where they ate lunch, The Ranch!  He loves queso and La Hacienda Ranch.

Then I received a few more pictures from Gran.  They went to the Botanical Gardens.

Of course, my favorite picture is the turtle picture… where they were almost kicked out of the Botanical Gardens by security!  Oh Gran!!  She said, ‘Well, I thought I saw a sign saying not to go in there.’  HA!  Someone called security and told them they needed to remove themselves from the prohibited area.  Here is Gran’s ‘illegal’ picture of Hagen before Security showed up.

And anytime you are with Gran, it isn’t complete without a Sonic run.

Both boys at some point during their special day said, ‘I miss Hagen’ or ‘I miss Mason’.  I love to know that they miss each other, but I also know it is SO good for them to have time away from each other and learn how to have fun without each other.

Super Bowl Sunday

Our church had a Super Bowl Sunday service.  We wore our favorite team’s jersey to church.

After service, the boys had a friendly very competitive game of flag football FULL on TACKLE football!!!

Although it was cold, we all had a good time!

1 pulled (or torn) hamstring

1 black and very swollen eye (yes, our pastor)

2 broken ribs (or maybe severely bruised)

1 possible concussion (was sent to ER, ummm, yep, it was a guest.  Thanks for coming to visit our church!!! Hope you come back soon! Open-mouthed smile)

1 very happy dude that was ready to play again!

A Birthday Party

The boys went to a birthday party of one of their soccer buddies.  They had so much fun, I figured I would document it on here.
This place was HUGE and crowded!  I couldn’t believe they could cram this many people in one place.  Can you spot the boys?

"How Preemie Moms Are Chosen" by Erma Bombeck

Did you ever wonder how the mothers of premature babies are chosen?
Somehow, I visualize God hovering Earth, selecting his instruments for propagation with great care and deliberation. As he observes, he instructs his angels to take notes in a giant ledger. "Armstrong, Beth, son. Patron Saint...give her Gerard. He's used to profanity." Finally, he passes a name to an angel and smiles.
"Give her a preemie."
The angel is curious. "Why this one God? She's so happy."
"Exactly," smiles God. "Could I give a premature baby a mother who knows no laughter? That would be cruel."
"But does she have the patience?" asks the angel.
"I don't want her to have too much patience, or she'll drown in a sea of self-pity and despair. Once the shock and resentment wear off, she'll handle it. I watched her today. She has that sense of self and independence so rare and so necessary in a mother. You see, the child I am going to give her has a world of it's own. She has to make it live in her world, and that's not going to be easy."
God smiles. "This one is perfect. She has just the right amount of selfishness. "
The angel gasps, "Selfishness! Is that a virtue?"
God nods. "If she can't separate herself from the child occasionally, she will never survive. Yes, here is a woman whom I will bless with a child less than perfect. She doesn't know it yet, but she is to be envied. She will never take for granted a spoken word. She will never consider a step ordinary. When her child says momma for the first time, she will be witness to a miracle and know it. I will permit her to see cleary the things that I see - ignorance, cruelty, prejudice - and allow her to rise above them. She will never be alone. I will be at her side every minute of every day of her life because she is doing my work as surely as she is here by my side."
